Origin: Own orchard in Raimat, Lleida, Spain.
Climate: Very cool nights and warm days produces intense flavours.
The trees were planted on the spring of 1988.
Variety: 100% Arbequina.
Yield: Very low:2kg(4pound) olives per tree.
Harvest:October 26th, very early, we sacrifice weight but have more intensity.
Tranport to the mill:Only 3 hours, minimum quality loss.
Mill: Stone mill.
Shaking: very cool, obtaining less oil but increasing flavours.
Press: Alfa Laval decanter cool pressing.
Yield: extemely low. 1kg of olives makes 0.12lts of oil . 3 trees are needed for making one bottle.
Acidity: less than 0.4.
Calification: Extra Virgin.
Filtration: Natural by racking.
Bottling: Dark marasca bottles for light protection.
Tasting: Lots of fruit, very concentrated flavour, sligthly geenish, very clean taste and low astringency.
